Rain Out

Hola!

Today has been a good day with no major complaints. I woke up and relaxed before making my breakfast. I had a big bowl of oatmeal topped with berries and almonds, a veggie scramble and a chai latte.Image I took the rest of the morning pretty easy, doing dishes and prepping my lunch, snack and dinner for the rest of the day.Image At 11:30 I headed in to work! 

Work went pretty well. I helped Megan finish up a few online orders, got the upstairs store straightened up and restocked and then added new product to the stock room. It started raining around 1 and it hasn’t stopped since. They ended up canceling the game tonight around 5 o’clock so Megan and I stayed and finished up a few things before we clocked out. 

I had my yogurt and peanuts for my snack as I drove home. When I got home all I wanted to do was relax. The rain had me feeling super lazy! I watched TV and then spent some time battling the wireless router trying to get it to connect. I eventually called my dad and had him help me figure it out. I then decided to go ahead and have all of my final transcripts sent over to Carolina. Since I didn’t end up working late tonight I decided to save the meal I made for my lunch tomorrow and so I whipped a plate of cheesy sweet potato cubes and veggies for dinner. It was yummy!Image

I am going to be up early in the morning to help with tarp pull at the stadium since my boss is going to be out recovering from his surgery today. I am kind of excited about it haha. I am scheduled to work 9-5 but I will probably end up working later than that since there is now a double header tomorrow and I just want to make sure we aren’t understaffed at the beginning. Well I think I am going to go have my snack and hit the hay! Hope you had a great day! Enjoy your friday!

On my own for a few days

 

 

Hi everyone! I hope the past two days have been wonderful for you. Mine have been pretty low-key, but great. 

Yesterday

After breakfast yesterday I went out to the barn. I rode Vinnie while Renee rode G. We began our ride in the arena and actually spent a decent amount of time in there. Then we headed down the road! We went all the way to the end of the road and we even through in a little trotting. There is a massive open field at the end of the road and we actually spent a few minutes riding through it. Vinnie was such a good boy! I was so proud of him for being so well behaved. On the way back we both jumped off when ever a big, scary tractor drove past us, but then we hopped right back up to go the rest of the way back to the barn. Vinnie was SO sweaty so I hosed him off real quick. ImageImageImageRay is such a goof ball! Vinnie of course had to roll after I hosed him. Horses… 

I was going to ride Ray as well but I was completely out of time! I had to rush home and I only had 15 minutes to get a shower and get all my things ready to go to work. 

After working for a bit I took a break to have my lunch. I had an apple, carrots, and a chicken salad bagel-wich. Image Work went well. It wasn’t a busy night at all but we still managed to do a good amount of business in the store! On my break I had a chicken sausage, spinach and sweet potato mixture but I didn’t take a picture haha. When I got home from work after 11 I made a quick snack of strawberries and an almond butter tortilla shell.Image

 

Today

This morning I woke up and relaxed for a bit before I fixed a big breakfast! It was a yummy one. My mouth is watering just thinking about those fresh berries!

I was lazy pretty much the rest of the morning and a good bit of the afternoon. I watched Rehab Addict and read some of my book.Image My parents left a little before two to take the RV to get worked on before they continue on with their trip to Chattanooga to see my sister. I am sad that I couldn’t tag along with them but in this case I felt work was a priority. I will get another opportunity to visit with her soon! For lunch I made myself another chicken salad bagel-wich that I ate with an apple, carrots with guac and a greek yogurt. Yum! ImageI did a couple things at home before I ran a few errands in Durham. One of those things was getting registered for the Running of the Bulls 8k in Durham at the end of the month! Yippee! After my errands I got changed for the barn and grabbed my snack! Image

I was at the barn for about 3 hours this evening. I began by riding Vinnie and he was kind of a butt head today. I blame the full moon haha. There was just one spot in the arena that he acted up in almost every time we passed through it. It was annoying and I ended up working him about twice as hard and as long as I intended, but I still had a good time with him. After I finished with Vinnie I worked with Renee and Ray. Renee warmed him up first and Ray was a little off as well, so she actually worked him the majority of the time and then she gave me another mini lesson. I enjoyed both of my rides so much!

When I got home I took a shower and then made myself dinner. I cooked a sweet potato and then loaded it up with peppers, onions and cheese. I also threw a little salsa on the plate for some spice. It was super yummy! ImageNow I am just relaxing for a few minutes on the couch before I go find something for my snack. I am glad that I will be working tomorrow, I felt like I didn’t have much to do today! Hope everyone has a great Thursday! 

 

Day Off, Woohoo!

So today I had the day off and I loved every minute of it. The farrier was scheduled to come today, but it got moved to tomorrow. I took the opportunity to try and sleep in a little, but it didn’t work out too much. I got up and worked on my puzzles and had breakfast. I made a quinoa, veggie and cheese scramble, a chai latte and a slice of almond butter toast. Oh how I love almond butter 🙂Image

Then I totally fell asleep on the couch. That little extra hour of sleep must have been needed haha. For snack I had oatmeal with frozen berries and PB2. Image

Once I finished eating my snack I got started on some chores. I got started on dishes and laundry and then I got ready to meet Josh for a run. He said he has been wanting to go for a run for a while and we finally got together to do that. I drove to his house and then we ran his road/neighborhood. It was a good run! I don’t think he was prepared for how slow I run though haha.Image

Once we finished our run I headed back home. I had my chocolate milk and relaxed a little bit before I fixed my lunch and spent the afternoon doing some more chores and relaxing. My lunch today was a sweet potato, chicken sausage, spinach and laughing cow hash, an apple, a carrot, and pretzels. Image

I have also been working on one of my mini projects. I am attempting another slouchy beanie that is part knit part crochet. I will share a picture when it it further along!

My snack was yogurt and trail mix. Mmmm 🙂Image

For dinner my mom made something that she saw on Food Network. I really wasn’t sure how it was going to turn out but it was great! It was a whole new way to experience a combination of foods and flavors that are quite common in our dinners. She made a sweet potato, carrot, garlic, onion puree and broiled tilapia with a yogurt-mustard-lime-honey-chive sauce that was ridiculously good. I had mine over more quinoa. How many different ways can you eat quinoa and sweet potato in one day? I didn’t mind though because it was all tasty. Image

Before dinner was my only hard part of the day. It wasn’t that big of a struggle. I just wasn’t sure how much of some things were going into the dinner. I am getting good at guessing though so I was able to overcome that with so much ease. Then I was able to really enjoy the terrific meal my mom made.

Overall it was a great day and I wouldn’t have done anything differently! Well, maybe I would have squeezed in the barn, but tomorrow I will be there extra long with the farrier to make up for it 🙂

Let’s Just Eat Cake.

Um, let me just start off by saying that my butterscotch banana cake is ahh-mazing. Seriously, stop everything you are doing and go make one. I had a slice last night…ImageAnd then another slice tonight when I got home from work, but this time with a little froyo!ImageRewind to this morning. I woke up for breakfast with my mom before she left for work. We tried another overnight oatmeal recipe. It was still good, but nowhere near as good as the vanilla raspberry! This morning was banana cocoa and a side of cinnamon toast. ImageFor this oatmeal, the amounts for the oatmeal, milk, yogurt, and chia seeds were all the same as the vanilla raspberry. Then we added 1 tablespoon cocoa powder, 1 teaspoon honey, and then half of a banana, sliced up.

We then swapped out the license plates on the jeep and ol’ blue. When my mom left for work I relaxed a little on the couch. Then around 11 I decided to go spend some time with Vinnie at the barn. I gave him a nice brushing and a ton of treats. He is walking better, he still had a step or two that seemed a little off and his back was a little sensitive. Tomorrow I might work on doing some stretches with him. Renee also left a few books for me, they will be perfect for reading on the beach!

When I got home for lunch I had no idea what I wanted to make for lunch. I knew I wanted something with either eggs, avocado, or sweet potato. I decided to save the eggs and avocado for breakfast. I went with making a loaded sweet potato. While I was zapping the SP in the microwave I chopped up some leftover green pepper and onion i found in the fridge. When the potato was done I sliced it open and spread the last queso laughing cow wedge on it, then topped it with the peppers and onions. I popped it back in the wave machine for another minute. Then I put some lettuce, salsa, and greek yogurt on my plate. It was kind of a take on nachos in a way I guess? Whatever you want to call it, it was fantastic. A safe comfort food for me. ImageImageI did some dishes when I finished lunch, then got ready to go for my meeting with Mary at 3:30. With Mary we talked briefly about some of the good things I did over the past week. Then we spent the rest of the time talking about a plan that we might try out. This plan include keeping track of the amounts of carbs, proteins and fats that I eat at each meal or snack. It is just a way to make sure that I am getting enough portions. I felt a little skeptical about it at first because numbers, counting, and keeping track is kind of what I obsessed over. It could be worth giving this technique a try though. We will wait and see!

Once we finished at Mary’s we quickly ran to Whole Foods so I could grab something to take with me to work for a snack and for dinner. I got my favorite flavor of Kind bar, dark chocolate and sea salt. Yummmm 🙂 Then for dinner I got a ham and cheese sandwich. It was a very tasty, filling sammich. I ate the whole thing on break! I was so proud of myself! Image^I just realized it totally looks like I’m not wearing shorts. I promise I am. The game went by at a quick pace compared to the previous games. It was a USA Baseball game as well. I was surprised that they beat Cuba 5-3! There were also fireworks tonight after the game, so I didn’t get home till after 11. We sold a lot more than expected though, so it was a good night! That froyo and cake definitely hit the spot. I was still scared about portion size, but I ate it!

I am ready to see what tomorrow holds for me!

Lovely (and Not So Lovely) Change of Events!

Good afternoon! I hope everyone has been enjoying their Thursday. I have been enjoying mine, even though it’s not at all what I had planned. But before I jump into that, let me do a quick rehash of last night’s dinner and snack! Dinner was chili mac and salad. I love my mom’s chili! Perfect amount of heat! ImageImageAfter relaxing and watching some tv after dinner, it was snack time. My mom basically took control of that one and said we were having the Ben and Jerry’s Half Baked froyo that I got at the store. I scooped out my portion and did my best to enjoy it. It was actually pretty good. More chocolatey than I was expecting. I struggled a little with it, but I did it!

Timing can really be funny sometimes. My therapy session yesterday was spent talking a lot about my social habits. I’ve never been the most social person (I often go days without talking to anyone other than a family member) but yesterday I heard from some people that I haven’t heard from a while. I stayed up pretty late texting and it was a nice little change of events. It’s amazing how a little social activity can really bring my spirits up, especially during this recovery because I often feel like I seclude myself.

The not so lovely change of events… It didn’t really bother me, I just felt bad for my parents. As soon as I woke up I heard my mom getting sick in her bathroom 😦 She had a terrible headache and didn’t feel well at all. I rescheduled my lunch plans I had made so that I could spend the day with her before work. Before I spent time with her though, I had to drive my dad to Roxboro to take him to the eye doctor because his eye was EXTREMELY red and irritated. It turns out he has a scratched cornea. Ouch. We also had to stop at his office for a little bit. So I didn’t eat my breakfast until I got back home around 10:15. I still ate what I planned out, even though it was a little later than I had expected. Vanilla drink and oatmeal with cinnamon, blueberries, and strawberries. ImageI chatted with my mom for a while, which was really nice. We talked a lot about everything that has been going on. Then we ran to Dollar General to pick up a few small things for one of the projects I want to do! While we were in DG my dad called and asked us to go to WalMart to pick up a prescription for his eye. So we were off to Walmart. We didn’t get back until after 2:30, so I didn’t end up eating lunch until around 3. I toasted up some bread and made a turkey sandwich with spinach and the chipotle laughing cow cheese. I also had blood orange greek yogurt with it (obsessed with that flavor!). ImageNow I have to go finish getting ready for work! The weather is supposed to be nasty tonight, so it could be an interesting night at the ball park. I have one of my favorite go-to dinners packed: chicken sausage, sweet potato and spinach! I am feeling strong and I want to kick this eating disorder in the rear! Now more that ever!
