Getting prepared!

Happy Tuesday everyone!

These past two days have shot right past me. They both seem to kind of blur together.

Yesterday I was up early to go to the gym with my mom before I headed over to work. We carpooled in and I was able to eat my overnight oats without having to drive haha. I had a sweaty, but good, run on the treadmill!1 2

At work I did a few tasks involving invoices and travel before focusing on getting more product up online. Every time I feel like I am catching up we get more product in and I have to start all over again! I enjoy doing it though. I had a banana and yogurt for my snack.3

For lunch I had pretzels, chicken salad, peppers, grapes and a cheese stick.4

After work we headed home and I had trail mix for my snack.5 Then I did some relaxing before cleaning off the wood for my bed frame project that I am finally getting around to doing! For dinner my mom made pasta, sauteed peppers and tilapia. I mixed my pasta and peppers with a little spinach and a dab of balsamic. Plus a sun dried tomato laughing cow wedge. It was all absolutely delicious! 6

We watched the movie Runner Runner and it was pretty good. I felt like everything was a little predictable, but it was still alright.

For my snack I had an almond butter sandwich and blueberries before calling it a night.

The original plan this morning was to meet my boss at the gym at 8 to workout, but he texted me at 5:40 this morning and asked if we could workout during his lunch instead. I had no problem with that! I was happy to sleep a little bit more. Then I got to see this goofball!7 For breakfast I had the overnight oats I made, topped with blueberries and walnuts, a pepper and spinach scramble and a chai latte.8

After breakfast I got ready to head over to Chapel Hill to get acquainted with the campus a little! I parked in my parking spot and walked over to the student book store to get my books for my biology class. Once I got my books I took a short walk to find the buildings my lecture and lab are in. Everything was close to my parking spot and easy to find, so I hope the rooms themselves are easy to find! I always feel much more prepared when I know exactly where I am going. That is always the stressful part for me! I am so happy to have everything I need and I am excited for the start of my first class as a Tarheel on Thursday!

Once I was done in Chapel Hill I went over to the Bulls to steal my boss. We walked across the street to the Y and got to work! We targeted our backs today and then did a few planks. I didn’t think this was a bad workout at all!9

After returning Bryan to the Bulls I headed home and then fixed myself lunch. I had a big plate of quinoa with taco turkey and cheese with carrots & salsa and grapes on the side. Plus a greek yogurt! Very tasty!10

After my late lunch I got to work on staining my wood! I ran out of stain though so I will have to get more so I can finish. I am trying to decide if I want to put another type of finish on it… Any thoughts???11

Now I am about to go have a little snack before I get ready to take my parents to Chapel Hill for dinner and exploring! Have a great evening!

Sheldon Cooper Is My Hero

Do you watch The Big Bang Theory? It is for reals one of the funniest shows ever. My favorite character is Sheldon Cooper. He steals the show! ImageIf you watch the show, who is your favorite character? If you don’t watch the show, start now! I just watched the new episodes tonight with my parents. Hilarious!

Last night when I finished blogging I had my snack. I went with a nut butter ball (I still have so many left) and a little creation I put together. I put banana slices in the bottom of a container and then poured chocolate pudding over the top then froze it. It was cold and creamy and the chocolate banana combination was just right. ImageImageThen I slept like a rock.

Thursday Events

This morning I woke up and had breakfast with my mom. I prepped overnight oats yesterday and this morning I zapped it in the microwave to take some of the chill out and then I topped it with a few berries and a Bak Ball. ImageThen I headed out to the barn to groom Vinnie and drop off the check for the vet. Vinnie was looking good again today! ImageScary sheep lurking in the background… haha! Lena emailed me with results from the vet, and she thinks it was just a bruise that was causing him to be lame. And she said his abscess was healed up nicely and he no longer reacted to the lameness test! Good news! She said that his recent lameness could have been a result from his malnutrition since it takes about a year for hooves to renew themselves completely. I am so happy that he should be back to normal shortly! The vet also said that shoes on his front feet might be beneficial, which I am actually happy about. After I was finished at the barn I came home (I hit a squirrel on my way… I was so sad!) and got ready for work. Work was super easy today. We did all the online orders we could and I called and emailed several people about their orders. I took a few snaps of the storage room that we organized yesterday. Believe it or not, it looks a lot better than it did! We got rid of several boxes by combining some products. ImageImageImageFor lunch we went to Red Lobster because Holden was being a super nice co-worker and wanted to share a gift card with Simeon and I. I had never been to Red Lobster before, and I was pleasantly surprised by the variety of their menu. I had a hard time deciding on what to get! And the Cheddar Bay Biscuits… very good. I had two. ImageThen for my meal I went with the wood grilled shrimp skewers. It was very yummy! It was served with broccoli and rice. I wasn’t a fan of the rice, but everything else was good. Simeon had to help me get my shrimp of the skewer… I felt like a little kid haha. But, he struggled a little too so I didn’t feel so pathetic. ImageI enjoyed my lunch with them. The are quite the entertaining duo. I could tell that I was still trying to order something that I considered healthy. I was a little nervous about the biscuits, but I wanted so badly to appear like a normal eater in front of them. They weren’t scared at all to down all the biscuits they wanted, so I did my best to try and include myself and enjoy lunch like they were. I would say I was successful. Back at work there wasn’t a whole lot to do. We did a few more online orders that came in and tried contacting people again. It was a relaxing day at work after two days of working hard. It was my last day working with the guys and I think I am going to miss them!

When I got home I relaxed a little then had a snack. I just went with something easy and predictable. I had strawberry pom Dreaming Cow yogurt with the Hodgepodge Harvest trail mix. ImageThen I did some chores around the house (dishes, laundry, decluttering) before relaxing a little bit more. Around 7 my mom and I started on dinner. We made yet another one of Rachael Ray’s recipes. Last one for the week haha. Tonight’s dinner was garlicky beef skewers with a potato hash. The steak featured some of the fresh rosemary that Mary gave me, olive oil and garlic. I made a bed of spinach for my potatoes and steak. Such a great dinner! The skewers were actually cooked under the broiler. I couldn’t believe how well they turned out! I agree with my dad though, it would probably be better with pork tenderloin just because sirloin can be a little tough sometimes. ImageVery flavorful! Now Thursday night television is almost over. I am going to go find something for snack! Tomorrow is Friday! Yippee!!

Monday Madness

I am glad the day is coming to an end. I can now relax and enjoy some Monday night television with my parents. Where to begin… oh yes! I ate a vanilla pudding and a Bak ball and a nut butter ball before having a wonderful night of sleep. I really could have slept much longer, but I was up early to have breakfast with my mom. I made overnight oats with raspberries and then my mom whipped up a banana blueberry smoothie. ImageThen I headed out to the barn. Vinnie was in worse shape today. I didn’t have the heart to make him walk all the way up to the barn so I took all my grooming supplies down to his pasture. I also tried to give him bute, but I don’t know how much of it he actually got. It is so sad to see him like this. I decided not to wrap his hoof today because I didn’t want him to put unnecessary weight on his right leg. I had to rush home to get ready for work. I quickly got changed and packed up my snack and a lunch (turkey, swiss, spinach, mustard sandwich and an apple) just incase I didn’t get time to go get lunch on a break. ImageI began the work day by sending out lots of emails and phone calls to customers to tell them their status of their products and to apologize for the delay. That was surprisingly time consuming. I ate the kind bar while working on that and then before I knew it my boss was telling Simeon and I to go to lunch. I let him pick the place and he chose Tyler’s because it was walking distance. I didn’t mind going there even though I went there Friday night with my parents because I was comfortable with ordering the Banh Mi that I got Friday. I ordered it with the sweet potato fries, but they gave me their garlic fries. I didn’t mind because they were pretty good. I only ate about 3/4 of the sandwich and some of the fries. ImageI enjoyed lunch. It was tasty and conversation with Simeon was nice. Back at work we did some organizing in the tiny little temporary store. Everything is still in boxes. Tomorrow job is to get it all set up. We also did some of the online orders and got them ready to ship. At 5 I headed home and as soon as I got there I fixed my snack. I just had some yogurt and granola. I love my Dreaming Cow yogurt. ImageImageAs soon as I finished my snack I made it my goal to finish sanding the walls and ceiling in my bathroom. I put in my headphones and got to work! I finally finished sanding! Then I had to clean up all the dust. There was a ton of dust. A ton. I was covered head to toe in paint and ceiling dust. I jumped in the shower just in time to get all clean before I watched the season premiere of How I Met Your Mother. We ate dinner while we watched. My mom and dad make tonight’s new recipe while I worked on my bathroom. Tonight’s new recipe was Rachel Ray’s Red Chicken Marsala. We ate it with leftover penne from last night and bread. It was so incredibly flavorful! ImageNow I am loving my lazy time on the couch. I am going to go enjoy it with a snack because I have another long day ahead of me tomorrow!
