Semi-silent Sunday: photos from the weekend :)

Hi all, I hope you have been having a wonderful weekend! Mine has been rather busy, with a few moments of relaxation thrown in here and there.

Friday

I was up early to feed the horses before I met Bryan at the gym! It was arms and abs day. I used one of my apps to come up with the workouts. We went up to 10 on the arms (leaving out the pull ups) and abs and we only did one round of the abs. We are beginners haha!1 2 24 25

After the gym I had my second breakfast and then read for the rest of the morning.3 I finished my book and was kind of bummed that it was over. Quick lunch! 4

My mom and I went out to the barn in the evening and I got in maybe a 3 minute ride. There was a lot of thunder but I really just wanted to get him in the arena. We fed the horses and I took care of the sheep and gathered the chicken eggs. On the way home I had a kashi bar for my snack.5 6

For dinner we went to Oak Tree Tavern in the middle of nowhere just across the Virginia border. This place was so cool. My parents went there for their anniversary and loved it. There was live music and it is in an old plantation house so it is extravagant. I had the best grilled mahi mahi over rice and veggies.9 7 8 We had a great time, clearly!10

Saturday

Went to the barn early to feed and then when I got back home I made my breakfast. 2 poached eggs over veggies, oatmeal with blueberries and coconut, and a chai latte.12

My dad and I went to Lowe’s and I got started on my bed frame. We cut the board to the right lengths and then I used a jig to drill holes in each end of the board. I had a quick lunch before getting ready to go to Heather’s baby shower.13 I actually had a nice time at the shower! They had a very nice set up and I got to see an old friend, Corinne. The three of us have known each other since elementary school!14 15(don’t judge me for re-wearing the shirt I wore out to dinner)

I had a pretty bad headache the rest of the day so I tried to take it easy. I had a snack when I got home and then relaxed.16 For dinner we had grilled chicken, roasted veggies, green beans and sweet potato gnocchi with a sauce I created. The sauce I made was kind of a failure. Not really my favorite. Oh well, only one way to learn!17

Today

This morning I slept in until 8:30 and then I quickly got ready to meet up with Josh and Justin. We went to Panera Bread for breakfast before going to The Summit for the church service. The service was good, but I didn’t take as much away from it as I did the other time I went with the guys. After church we spontaneously played mini golf. I was in the lead up until the 8th hole… I finished in second though!18 19

For a late lunch back at home I made myself quinoa with sauteed peppers, leftover taco turkey, pepperjack cheese and guacamole. I also had a greek yogurt.20

After lunch I push mowed outside and worked up a good sweat. I came inside and relaxed for a but before fixing my snack and heading out to the barn.21

Vinnie was good, really lazy at first. Then halfway through my ride the little neighbor girl was screeching at the top of her lungs and Vinnie wasn’t exactly a fan of that. But it was still fine. Vinnie might have worked up the biggest sweat yet! I gave him a really thorough hosing off, and Ray starting licking water off Vinnie’s butt which was really adorable.22 23

Now I am about to go have dinner with my parents. I feel bad I didn’t really do anything special for father’s day, especially since my dad has done so much for me this past year! I am going to have to make up for it!

This week is flying by!

Hello all! This week is absolutely flying by! I can’t believe tomorrow is Thursday already!

I feel like this always happens to me, but I typed up this whole post and then I completely lost it all! After I loose it all I just don’t have the patience to retype it all up. I know that’s not fair t0 my readers because I am sure some of you would love to read about my past two days! Luckily though, the past two days haven’t been super eventful so a quick summary will still do them justice.

Monday night’s cookout was so much fun! I had a great time hanging out with friends and grilling. Being social really does amazing things for your happiness.1

Yesterday and Today I worked 9-5 so my days were spent at the Bulls. Yesterday I had oatmeal before work and then my mom dropped me off a lunch from Whole Foods. On my way home I had yogurt and a kind bar and then it was raining so I just read some of my book, made banana bread and then helped with dinner. We had delicious grilled chicken, veggies and sweet potato. For my bedtime snack I had peanut butter tortilla shells and an apple.IMG_31792 3 IMG_3180

This morning I woke up early and headed outside for a 4 mile run around the neighborhood. It was the perfect temperature! I got showered and ready for work before I fixed my breakfast.4 IMG_3182

At work I focused on restocking all the hats in the store upstairs. We got the news that we will be losing the upstairs store but we will be getting another location for our second store. That will be craziness. My boss and I went to Panera Bread for lunch and it was tasty as always! 5

On my way home I snacked on pretzels and then when I got to the house I immediately registered for my summer biology course at UNC. It feels so good to be enrolled for that! Then I was off to the barn! I spent a lot of time grooming Vinnie before I lunged him. It was awfully hot today so I didn’t want to ride him. I talked to Renee for a while before I headed home. When I got home my parents had dinner ready. My dad grilled some amazing mahi mahi that we had with veggies and rice. Yum! I also threw some salsa and guacamole on my plate.6 IMG_3183

Well, I think I hit all the big things from the past few days. I am off to have my snack before bed! I am off of work tomorrow but I am meeting my new “client” in the morning. I am so excited!

Happy Saturday! I feel like I am finally taking control of this thing! I am so grateful for all of the support that I have gotten so far and it is continuing to propel me in the right direction. Last night for snack I had a pupcake with trail mix and a mini 3 Musketeers bar.Image Then I had a great night of sleep. I was able to sleep in and it felt incredible. I was greeted my this friendly face. Nothing like getting tickled in the face by whiskers first thing in the morning 🙂Image My dad then told me to get ready to head out to run our errands. He told me we were just gonna grab breakfast out and that I should have my glass of orange juice before we left. So I had my juice and got ready to head out the door. We went to Golden Corral for breakfast because breakfast places are limited in Northern Durham and GC is right by Lowe’s. I was a little nervous, but not as nervous as usual! Yippee! As I was getting out of the truck I told myself to let my bubbles do the talking, not Eduardo. So that is exactly what I did. Since breakfast was late I tried my best to make guesses about the things I would need to fill up all my morning bubbles so I wouldn’t have to have a morning snack and disrupt the timing of food for the rest of the day. So since I already had my fruit from my juice, I concentrated on the other food groups. I loaded my plate with eggs and veggies, pancakes, yogurt, and a bacon biscuit that I assembled.Image I did my best at guessing the nutritional content of my meal. At Lowe’s my dad and I got a few supplies for my bed frame project and then all of the supplies for my closet project. Then we went to the Reuse Warehouse and I talked to a guy about getting some nice cedar wood for my bed. He has to look around to get enough 4x4s that are straight, so it might be a while before my dad and I can get to work on that. But in the meantime I have my closet to do! My dad said we could start it tomorrow! I am rather excited. I came home and started cleaning out my closet and room to prepare. Then I fixed my lunch. I decided I would have my delicious spiced chai protein drink for snack, so I fixed my lunch accordingly. I made myself a turkey, spinach, spicy bean spread sandwich and my sides were berries, pretzels, a peanut butter ball and then a glass of milk.Image Super filling! I did a few more chores in my room and then I snuggled on the couch with my cat and took a long nap while football was on. It felt good to have lazy afternoon. I just hope I will be able to sleep tonight! When I got up from my nap I went out to the barn to brush my little mud ball. I caught up with Renee and Lena which was really nice. Renee and I talked all about the craziness of the US National classes we watched online. Then Rena and Lena took Ray and G up to arena and rode before they went down the road. Renee said soon I would be able to join them! I can’t wait because I was super jealous of all the fun it looked like they were having! Vinnie enjoyed the carrots I brought him. I think he liked having something a little different than an apple. He would probably like getting an apple and carrots even more haha.Image When I got home I had my spiced chai protein drink and then worked on meal planning with my mom. We searched through different recipes and came up with a good plan for this week’s dinners. I tried to utilize things that we already had so that we wouldn’t have to buy a whole bunch. I think we will still be buying a lot though haha. I also tried to come up with some good morning plans for the week. I tried to come up with different combinations of breakfasts and snacks to fill up my entire third. I got a good base, but I will need to do some tweaking tomorrow once we get all of our groceries. Then my mom and I got to work on dinner! Tonight was mahi-mahi tacos, rice and black beans and oh my goodness was it good. I made sure I got a full serving of everything and It ended up filling the majority of my evening third! For the mahi-mahi I diced each filet into 10 cubes and then I seasoned them up with a secret combination of spices. Then we broiled them on low for abut 4 minutes a side and they turned out perfectly. My mom diced everything up for fresh homemade pico as well as the cabbage.Image We used these cool standing soft tacos that I found. I gobbled up this dinner!Image I ate my whole entire plate and I didn’t let myself feel guilty about it! Plus it felt really good to know exactly what I was getting and I got the satisfaction of knowing that I put together such a delicious dinner. My dad said he liked my mahi-mahi tacos better than the ones he made before 🙂 High five for me. I think Mary and Dr. Chung are going to be wowed with my improvements! My parents and I just watched Promise Land. It was about fracking and it had Matt Damon in it. I give it two thumbs up. It was really interesting. I love movies like that. I definitely think everyone should watch it. Now we are continuing with Matt Damon movies. We watched the end of Good Will Hunting (one of my favorites) and now the Borne Supremacy is about to start. Love me some Matt Damon. Tomorrow is going to be a busy day and I am excited to be at this stage where I am really pushing myself out of my comfort zone to get closer to my goals!
