I’m baaaaacccckkkk

Hi everyone! So I’m guilty… i don’t even remember the last time I posted an update! I’m so sorry that I fell off the face of the planet. But I am back now!Β 

So I have been having a pretty low key life lately. I had my weekend trip to Boone and I had a great time! It was so nice to see people I haven’t seen inΒ ages. The last time I saw some of them I was really sick and unhealthy, so it was nice to see them when I was back in my true body. I just felt so much better! It was a little strange being in Boone, but it still felt familiar. A few pictures from my trip:8 7 4 3 2 1 5 6

After I got back from Boone I spent the week alone at home since my parents went back to Baltimore. I got to relax a lot and I took care of the horses for a few days while Renee took G to a show. A few pictures from the week:9 10 11 12 13

It’s official! Madelyne now lives down here! I am so excited to have her down here. She came down on friday with my aunt and uncle and then we all helped her move into her apartment on Saturday. Before we met at her apartment my mom ran her first ever 5k! We did the I Am Too Sexy 5k in Durham and we had a blast! My dad even went to support us. I beat my goal of finishing under 28 minutes at about 27:32 and I also just happened to be the second woman to finish! My mom also beat her goal and came in at around 42 minutes. I was so happy for her!14 15 16 17 18

We spent the rest of the day with the family. On Sunday I made a delicious breakfast featuring the jalapeno bread my parents brought back from the amish market. Yumm! I fed the horses and then came home and then my dad helped me to work on my bed frame. We worked on it for a longgg time and I was so glad to have it done! We had to take a trip to Lowe’s but then we finished it up. The frame ended up being a little bit big for the mattress and we noticed a few small mistakes that we made, but I still think it looks great and I am so happy with it!19 20 21 22

Today I went back to work for the first day since before Boone! I had been in briefly in the mornings last week, but not to actually work. So today was my first scheduled day and it felt good to be back. My mom and I went to the gym after I was done with work and we had a great workout. My dad cooked up a great dinner and now we are all just hanging out enjoying our night. Hope you all have been doing well! I will definitely do a better job of doing my blog posts in the days to come!Β 

Challenge: LaPlace

Hello, hello! I figured I would drop in quickly before I kick start my all day study session.

Yesterday I had to work at the Bulls from 9-5 because it was Fan Fest for the All Star Game. Tons of people came to the park to take tours and do batting practice. We weren’t super busy in the store but we did a decent amount of business. After work I came home and was shocked by how much work my parents did around the house. My mom fixed up my bedroom and the guest bedroom and they look incredible now! My dad worked on the front porch and got a lot done as well. So to thank them I drove them out to dinner. It was my choice, but you know me, I can’t make a decision to save my life. We let the flip of a coin decided if we were going to go in to Durham or Hillsborough. The coin decided on Hillsborough. I was glad that the coin decided Hillsborough. There aren’t any chain restaurants in the downtown area, meaning I can’t look up the nutritional data of the food so I can make a safe choice. Before we left the house my dad mentioned going to Brier Creek so we could go to Dicks Sporting Goods and then we could just go to dinner somewhere over there. I knew there was an Applebee’s over there so I looked at the menu online and then looked at the nutritional content to make sure what I wanted was acceptable. In doing that I realized that I am only concerned about one thing when eating out. I was only looking at the amount of fat in each dish. I didn’t care about the amount of protein or carbs that were in a certain meal. So I found that very interesting. So I was glad that we went to Hillsborough. It was a true challenge and I tried hard not to let myself worry about the nutritional value of the food!

Once we got to Hillsborough (they have the cutest downtown, FYI) we walked around a little to explore the options. Again, it was totally up to me where we went. I narrowed it down to two places and then deiced on LaPlace because it would be something completely new and different for all of us. It was also going to be a reallyyy good challenge for me! I decided to order something on the menu that actually sounded really good to me. But let me back up a minute. This place was freaking adorable.1

2 To start we had boudin balls (I think that’s what they were called?) made with rice, pork and andouille and then fried. They were served with a spicy mustard and pickled onions and HOLY BOUDIN BALLS they were good.4 My mom ordered a new beer and she raved about it, so if you are a beer drinker, try this:3
For my entree I ordered crawfish etouffee. I remember Mary telling me about crawfish etouffee from her trip to New Orleans, so I decided to give it a try! Plus I was really in the mood for shrimp, and crawfish was close enough! I was in heaven… crawfish etouffee is pure deliciousness.5 It was so filling and satisfying. I succeeded in not ruling out certain things on the menu and I ordered something I really wanted to try! Yippee!
We had such a fun time at this restaurant. If that is what food is like in Louisiana I wouldn’t mind taking a trip there haha! It seemed to be very authentic: they made all of their sausages and they had a good variety! We decided we would go back there.

This morning I tried to sleep in a little but was rather unsuccessful. I migrated out to the living room and just relaxed and did the crossword puzzle until my mom was awake. Then we got ready and went outside for a run! We both worked up a good sweat. I went 4 miles and I think my mom went about 2.6. I am so proud of her! Close to the end I jogged beside her for a little bit to give her support, but I don’t think she needed it! 6

After our run we came inside and I made myself a quick breakfast. I made a pico egg and spinach bagel-wich with a side of berries and a chai latte. Yum! IMG_3518

Well, I guess I have put off studying long enough… I figured I would reward myself this evening with a break from studying so I can go see Vinnie! Hope you are having a wonderful weekend! Enjoy the rest of it πŸ™‚

Let the two week count down begin!

I apologize so, so, SO much for not taking the time to drop in and give updates. My life has been so chaotic that I barely have time to sleep. I know in my last post I said that I would be back to write the very next day. Whelp… I lied. Sorry 😦 I had a stomach bug and was feeling AWFUL so I did absolutely nothing and I figured you all wouldn’t care to hear about that. So I saved you big time from getting too much information.
Since then I have been going to class, lab and work. Those three things have been my life. When I was able to be home all I had time for was homework and studying. I am still loving the course. The material is fascinating. I am definitely ready for it to be over though so my stress level decreases some. I have not been entirely satisfied with the grades I have been making, but apparently my grades are still slightly higher that the class average. I am trying so hard to accept the fact that I’m not going to be perfect and that it’s alright not to be. I only have two labs left: Monday is the second part of the anatomy dissection plus a quiz and then Tuesday is the final exam. I can’t believe lab is almost over! I’m ready though. I’ll be able to focus more on lecture. I only have two weeks left of lecture and then my life can briefly return to somewhat normalcy before I start the fall semester!
So some other things that have happened since I last popped in… Let’s see. Matt (my cousin Madelyne’s boyfriend) moved down here and started working at my mom’s school! Madelyne is going to be coming down in a few days and then I think she is moving in to her apartment down here at the very beginning of August. How exciting is that?!
Lately I feel like I have been a walking target for bad luck. I’m exaggerating because really nothing awful has happened. I did drop my phone in the parking lot at UNC, shattering the screen. I am hopefully getting it replaced today though. Then the next day I spilled my overnight oatmeal on myself a little bit in the way to class so I had to walk around with a stain on my shirts. I tried to hide it though haha. Then I definitely got ink all over that shirt from my printer at home. Fun times.
I had my appointment with Mary on Wednesday. It went really well. I filled her in on classes and then talked about some challenges I still faced. It is still a little hard for me to be spontaneous about eating. For example, I brought me lunch with me one day to UNC. In between lecture and lab my friend Erica invited me to go to a burger place for lunch with her and few other people. I politely turned it down, saying I needed to do some work before lab and that I brought my lunch with me. Looking back now I would have loved to meet more people, but the thought of having a burger for lunch that was unplanned was still a little bothersome. So I just need to work on getting over those fears of having food that is unplanned. And then the added fear of eating out. I feel like when I look at a menu I still automatically rule out certain dishes because I have marked them as “bad.” So Mary and I talked about that for a while and discussed how I don’t indulge in rich dishes very often so if I see something on a menu that looks good I NEED to order it! Good goal for the next time the opportunity arises.
This upcoming week is going to be a doozy! Wednesday is the triple-a all star game and the Bulls are hosting it. The days leading up to it are going to be insanity. So I am going to be busy with class and then through that on top. I have my lab final Tuesday and then a test in lecture on Thursday. I don’t know how I am going to have enough time for it all!
I haven’t taken many pictures lately and the ones I have taken are boring, so I’m sorry this post is dry! I am going to try and take more time so I can do my writing because I miss doing this!

First half of the week is in the books!

Wow… I haven’t posted an update in a while! I feel like I only really have a few things to mention from the past few days. Let’s see, I’ll start with Monday if I can remember that far back!

Breakfast was banana bread. 1I had a dentist appointment early Monday morning in Roxboro. It went well as always. Then I was off to work. It was a really good day at work. I mainly worked on getting product up online, but I also just had a nice time talking with my co-workers. They are such a fun group. For snack I had yogurt and a kind bar.2 My mom dropped off lunch for me. She got me a huge turkey sandwich from Whole Foods, along with fruits and veggies.Β 3

When I got home from work, the power was off so I had a yogurt and a WhatsoNutso bar for my snack before heading out to the barn to ride.4 Just before I was about to ride my parents showed up at the barn and said that they were going to go pick something up for dinner since the power was still out. There was a moment when some eating disordered thoughts crept into my mind. I was quickly going through all the options of takeout and labeling it as acceptable or not. I just couldn’t decided on anything that sounded good so I told my parents to just get something because they know what I like. I think Vinnie could pick up on my discontent a little because the beginning of the ride was a mess. He kept freaking out at one end of the arena and I probably was letting my anger control the situation instead of handling things in a calmer fashion. The ride got better though and we ended on a good note. Think I wore him out? Hahaha.5

When I got home later in the night the power was back on and I was surprised to find that my parents just picket up a rotisserie chicken, sweet potatoes and veggies.Β 6

So that was an interesting dilemma I found myself in. I guess eating out or getting take out unexpectedly is still a little bit of a sore spot for me to work on.

Tuesday

Tuesday morning I was up early to hit the gym with my boss! On the way in to Durham I had two slices of my banana bread.7 At the gym we did strength training, targeting our legs. Holy cow, at the time it didn’t seem like much but later in the day and all day today we sure were feeling it!

After our workout I came home since I had the day off and then I fixed my second breakfast. I made a spinach scramble using two of the farm fresh eggs from the barn πŸ™‚ Yum! I also had some strawberries.Β 8

I read some of my book and then took a reallllyyy long nap haha. When I woke up I read some more and watched a little TV before fixing my lunch. I used leftovers to make a veggie, chicken and sweet potato hash that I had with blueberries, cashews and a greek yogurt.9 I relaxed until it was time for me to get ready to go have my appointment with Mary. I had a kind bar for my snack before going in to meet with her.Β 10

I had a really good session with Mary yesterday. I kept a food log over the past week and we looked at each day to see what percentages of my intake were coming from carbs, protein and fat. She told me that it seemed like I was falling a little short on my carbohydrates, especially since I am being so active. So we talked about things that might be holding me back a little bit when it comes to carbs and we made goals for myself. We also did a nutritional analysis on one of the days that most reflected my typical day to get a more in depth look at if I was getting the right percentages when it comes to all of my carbs, veggies, fruits, proteins, fats, vitamins and other nutrients. It was just an overall informational session! It was funny how last week we wanted to look at my protein numbers but it turned out to be my carbs that were falling short.

After my appointment I headed straight out to the barn so I could ride with Renee before it got dark. We went on a trail ride since she just wanted to do something light with G since she left today to go to a show! Jealous. Anyways, I was super impressed with Vinnie because I jumped right on him and went down the rode without warming him up in the arena or anything, and he wasΒ amazing! It was getting dark outside and he usually freaks out but he was so, so, so well behaved. I was thrilled πŸ™‚ I helped Renee feed the horses and chatted for a bit before heading home.

For dinner my parents made roasted veggies and ravioli.11 Very tasty! I had a low key night and then had an apple and an almond butter sandwich before heading off to bed.

Today

This morning I was up early again to meet Bryan at the gym. He expressed his hatred of me since I made him so sore yesterday morning haha! On my way in I ate the remaining two slices of my banana bread. Today we ran on the treadmills for 30 minutes for our workout. I really had to push myself today, but it felt good when I was finished.12

At work all I did was put up product on the website. I got 20 women’s shirt completely finished. After adding all of the information on the website I had blueberries, greek yogurt and almonds for my snack.13 Then I went to take pictures of all the shirts in the video room. After I took all the pictures I had to edit them before I could add them to the website. I took a break to have my lunch. I had an apple and leftover veggies and ravioli.Β 14

When I got home from work I sat out on the porch swing for a bit and watched a storm roll in as I ate a kind bar for my snack. I was going to sit out there and read some but then it became extremely windy and it started to rain so I headed inside.15

Well, I think now you are officially up to date! I am taking care of the horses while Renee and Marty are at the show so I am off to feed them!

Variety is the spice of life

Oh goodness, another day come and gone, just like that! Today absolutely FLEW by.

Early Morning Work + Breakfast

I was up early to knock out the rest of the work for my client before fixing my breakfast and getting ready for my little meeting at Starbucks. I finished up the 4th sample day. I feel like this is a good start for my client! For breakfast I had sauteed red pepper and spinach mixed with an egg and oatmeal topped with berries and shredded unsweetened coconut. A little somethin’ different. I guess I forgot to take a picture of it though, which is a bummer.IMG_3197

I had a great meeting with my client! I already have a few more other things to work on for her. I really hope this works for her because I can tell she is in so much stress. I had a delicious chai latte while I talked with her.

After my meeting was over I headed over to the Public Safety building at UNC to try and figure out a parking permit for my summer class and then for the fall. I basically didn’t have anything I needed with me to get the permit since I drove my dad’s truck… Poor old blue is in the shop. Then permits for the fall are based on a lottery, so I am scared I am not going to be able to get one. It’ll work itself out though. I made a quick stop at Bed Bath and Beyond to get a few gadgets with a coupon and then I headed home.4 I read for a while before I fixed my lunch. I made a sweet potato, brussels, broccoli and taco turkey hash with a laughing cow queso wedge. Plus berries and a greek yogurt! So delicious!IMG_3199 I had to switch it up from my normal chicken salad with pretzels, carrots and guac.

I did a few chores around the house before heading back in to Durham to get my hair cut by Danica at Amber and Dave’s house. I just got a trim, but I am already missing the length, even if it was dry! Haha, it’ll grow back though. I even held baby Asher for the first time today! It went a lot better than I expected. He is a good little guy.

When I got home I made a quick cheese quesadilla before heading out to the barn to ride Vinnie.IMG_3200 I had a very relaxing ride! Then I had a little fun with the barn cats πŸ™‚ Vinnie was showing off his neck to try and get some treats. What a goober.1 3 2

Now I am going to go fix my dinner, but first I will quickly share my goals for the week that I made with Mary!

  • Stop being repetitive
  • Add back more breads or bagels instead of always having pretzels
  • No new “food rules” to help me cope with any stress
  • Make a list of my priorities but be aware that there will always be a list
  • Get more sleep!
  • Make a food record for the week

So we talked a lot about each of those things because they seem to be factoring in to my eating habits and Mary wants to make sure that I am remaining stable with school starting up. She always thinks of everything!

I was going to have the day off tomorrow, but my boss asked if I could come in. I am definitely not going to turn down the hours! So I am going to go eat my dinner and prepare myself for tomorrow πŸ™‚ Have a great night!

I’m sold

Good morning, all!

I had a fabulous Monday. I know what you are thinking: that sentence shouldn’t even exist. Everyone dreads Mondays, but when you get the day off incredible things can happen!

So after typing up my post yesterday I did the crossword puzzle before fixing myself banana bread and a green smoothie for breakfast. Oh how I missed my green smoothies!IMG_3066
I was bummed when I checked my email and saw that my advising appointment at UNC was canceled because the advisor was out with an illness. So I rescheduled and made an appointment for the first time available, which is next Monday. So because I didn’t have to go to Chapel Hill in the morning I took one of my books and hit the porch swing for a bit of time. It was so relaxing! I eventually headed inside to start getting ready to go into Durham. I stopped at the bank on my way to Whole Foods to grab lunch for my mom and I. We ended up eating our lunches on a shaded bench outside her school. It was beautiful out!1 2
I basically talked her ear off about new developments in my life, AKA boy drama hahaha. It’s not really drama though. Before leaving the shaded bench I prepped a little work for my appointment with Mary.
My time with Mary flew by! We talked a lot about general things and how my week went. I always like how Mary will use other real life examples to explain certain difficulties that others might face. It sometimes is like I am getting a mini lesson of something I might learn at UNC. So of course I love it! Then we dove into doing the Quick Quiz activity in The Tao of Eating book that she lent me. The quiz is designed to analyze how much you are still letting thoughts about food dictate your thoughts or actions. Going through the question I had to quickly right down a yes or no and then we added up the yeses to see where I scored. I originally scored rather high, meaning I was still very consumed by “diet” rules or thoughts, but then after discussing each one (because the majority of my answers were more of a “kind of” than a yes or no) we concluded that I am only moderately driven by some of those remaining thoughts. Then I told her exactly that, they are all thoughts and my actions don’t reflect them. As we discussed each question and my response I wrote down long term goals, so now I know of a bunch of things that I can still work on! It was a great session and we covered a lot of ground!
Once I got home I relaxed for a bit before fixing my snack of pretzels and guacamole. I hadn’t had guac in a while so I was super happy!IMG_3067
Then I got a text from Renee saying she would be home at 7 and she asked if I wanted to ride Ray. I jumped on the opportunity! So I got changed and headed out there. I groomed Vinnie and gave him an apple (he got the day off from work too haha) before Renee and I headed up to the arena with Ray! She rode him first so that she could give me a visual of all of the cues she uses with him. Then it was my turn to hop up in the saddle! I had a great time and I absolutely loved riding him! That was the verse time I think I have ever seriously ridden western. He really wasn’t a challenging horse to ride. Yes, it still required a lot of work, but it was so enjoyable! Renee was so happy that I rode him and that I thought he was a great horse. I made plans to ride him again this morning before I go to work, so after I fix my breakfast it is going to be a morning full of horses!
When I got home last night my parents had dinner ready. We had chicken sausage, peppers and onions, and then I heated up leftover rice. It was simple and delicious!IMG_3068
I relaxed the rest of the night and before bed I had a quick snack of an apple and trail mix.3

Self-growth From Finding Challenges

Do you ever hear people say that there is always something that needs to be worked on? I find that to be true. I think there is a healthy way to always challenge yourself though. We don’t need any of that obsessive perfectionistic vibes floating around! I am talking about the small daily challenges that one might face and working on overcoming those to better yourself in a way that bring you complete and total happiness. Who doesn’t want that? I will forever be finding new ways to push myself so that I am living the life I want to live.

I was up early this morning to meet Mary at 7:40 for my appointment. I had work afterwards so we kind of jumped right in to discussing this past week and the upcoming week. The big things we talked about were breakfasts and then eating out. I mentioned to her how it has been a little difficult to come up with something to have for breakfast when I know I have a small window of time, such as when I wake up to go to the gym in the morning. I want to come up with a good breakfast and morning snack that is satisfying and gives me necessary nutrients. So we compared what my breakfast was like on a day when I can cook breakfast at home and have an easy going morning with what my breakfast and morning snack is like when I am up early to go to the gym. We talked about a few ideas for meals that could be prepared in a pinch if I didn’t prep my breakfast the night before. Another challenge I still face that I would like to work on to bring more joy and spontaneity in my life is eating out. I haven’t eaten out in quite a while but it is something that people do all the time, so we talked about that for a bit. I told her that my parents and I are going to go out Friday night, hopefully to a new place, and I am going to order something that the place is really known for. That way I can really get the full experience of the restaurant and who knows, maybe I will taste something that changes my life! Mary also gave me another book to look through that she thought I would enjoy πŸ™‚

After my appointment with Mary I went to work. I had my breakfast while I worked.Image I had a great time at work. We got the store completely restocked and then I got some reorders figured out for my boss. The people I work with really just make the day amazing. They are the most entertaining people I know! I wish my boss could have been there though. I feel so bad that he is sick right now! I took a break to have my lunch. I packed some leftovers along with strawberries.Image

When I got home at 6 I had a Kashi bar for my snack and then got started on a few things online for UNC. I also got some work done for the online store for the Bulls! I felt very productive this evening. I was supposed to hang out with my neighbor tonight but he was tired after a crazy day so that didn’t happen, which is fine because I got to watch the Penguins win their game! That and my mom made a delicious dinner πŸ™‚Image

I packed up my lunch and snacks for tomorrow and then made overnight oatmeal for my early morning breakfast before I go to the gym with my mom. Then I work 9-5! I like these weekday hours.
