I’m baaaaacccckkkk

Hi everyone! So I’m guilty… i don’t even remember the last time I posted an update! I’m so sorry that I fell off the face of the planet. But I am back now! 

So I have been having a pretty low key life lately. I had my weekend trip to Boone and I had a great time! It was so nice to see people I haven’t seen in ages. The last time I saw some of them I was really sick and unhealthy, so it was nice to see them when I was back in my true body. I just felt so much better! After I got back from Boone I spent the week alone at home since my parents went back to Baltimore. I got to relax a lot and I took care of the horses for a few days while Renee took G to a show. A few pictures from the week:9 10 11 12 13

It’s official! Madelyne now lives down here! I am so excited to have her down here. She came down on friday with my aunt and uncle and then we all helped her move into her apartment on Saturday. Before we met at her apartment my mom ran her first ever 5k! We did the I Am Too Sexy 5k in Durham and we had a blast! My dad even went to support us. I beat my goal of finishing under 28 minutes at about 27:32 and I also just happened to be the second woman to finish! My mom also beat her goal and came in at around 42 minutes. I was so happy for her!14 15 16 17 18

We spent the rest of the day with the family. On Sunday I made a delicious breakfast featuring the jalapeno bread my parents brought back from the amish market. Yumm! I fed the horses and then came home and then my dad helped me to work on my bed frame. We worked on it for a longgg time and I was so glad to have it done! We had to take a trip to Lowe’s but then we finished it up. The frame ended up being a little bit big for the mattress and we noticed a few small mistakes that we made, but I still think it looks great and I am so happy with it!19 20 21 22

Today I went back to work for the first day since before Boone! I had been in briefly in the mornings last week, but not to actually work. So today was my first scheduled day and it felt good to be back. My mom and I went to the gym after I was done with work and we had a great workout. My dad cooked up a great dinner and now we are all just hanging out enjoying our night. Hope you all have been doing well! I will definitely do a better job of doing my blog posts in the days to come! 

Downtown Durham Eats

Today was a full day, mostly spent in Downtown! This morning we got ready and headed to Monut’s for our breakfast before I had to go to work. I loved looking out the window at the downtown sites as I ate my delicious bagel, egg and greens sandwich. Plus a banana I brought from home. ImageImage

At work I helped tag a bunch of merchandise and then we worked on online orders. I packed soup, a grilled cheese, an apple and yogurt for lunch.Image Today was a really easy day at work haha.

When I got home I chatted with everyone as I ate my snack.Image Then we looked at places to go for dinner before Matt showed me a website that he got started on for my business. It looked AMAZING! Seriously. I am so excited about it. I really want to explore this pathway.

For dinner we went to Bull McCabes Irish Pub. It was so crowded so we had to wait for a while to get a table, but the atmosphere is killer. We chatted and ate and watched the NC State game. It was a great time! I had corn and black bean quesadillas which were yummy!ImageImage Now we are back at home chatting some more!

Well, that was a very short summary of the day haha. I am excited for the day tomorrow! Hope you have fun plans for your weekend!

Durham? Power Outage?… Durham!

Today was better than yesterday. By a lot. I slept well out in the RV with the kerosene heater so this morning I woke up and ventured into to frigid house. I snuggled up on the couch with my cat, reading a book, clearly in denial that the power was still out. 8:30 rolled around and my mom started questioning me about the plan for the day. Another peanut butter sandwich was fixed for breakfast, along with some berries.Image Once I finished eating my mom and I got ready to go workout at the Y. All of the treadmills were occupied when we arrived so we decided to do strength training. I haven’t done much strength training in a really long time so it felt good to work those forgotten muscles! I am going to be feeling it tomorrow. After a solid 45-50 minute workout we stretched and then hit the showers. It felt so good to shower! I missed having access to running water. Once we were cleaned up we ran a few errands and I did my grocery shopping for my client. I didn’t have a clear menu planned so I just kind of made a list off the top of my head. I was originally going to meet my friend Liz at 2 for a late lunch but she was running late because she hit terrible traffic. We went to Panera so my mom could have lunch and we sat out on the patio where I finished reading Lies You Wanted to Hear. It was an interesting book. Lots of drama related to a messy marriage. I ended up meeting Liz at 2:45 at Daisy Cakes downtown. I wanted to choose a local place I had never been to and we both agreed this place looked yummy. My mom did her own thing while I met with Liz. I ordered a roasted fennel sandwich and it was to die for! Pepperjack cheese, tomato, tomato jam, arugula, lemon aioli, zucchini. Mmm!Image It was so great to catch up with Liz. I really missed her. She was my closest friend at Appalachian. I wish I could visit with her more often! After we ate we did a quick walk through part of downtown talking about very random things! She eventually had to get back on the road to finish her trip to Maryland for her spring break. My mom and I headed home and then joined my dad in celebrating the return of our power! I was so thrilled because my dad said the power company estimated the power coming back around 6 pm TOMORROW. That would not have flown well with this chic. I got all the groceries situated and then worked on puzzles. I made a loaf of banana bread and the had caramel greek yogurt for my snack.Image I then hit the couch and watched Scandal. For dinner my mom roasted carrots with potatoes, broccoli and my dad grilled up some meat.Image It was a tasty, simple dinner. After dinner I got started on a few things for my client.  I cooked up a pot of rice and then made sweet potato gnocchi for the first time ever!Image I will cook it tomorrow and I am really hoping it turns out well! I am off to go have my snack and watch this Duke/UNC game! Hope you had a fantabulous Saturday!

Cooking Up a Storm

I have done so much today… I don’t know how I fit it all in. I had fun doing it though! I feel like I still have a lot to do so I am going to just going to take you guys through a quick summary of the last 24 hours.

E’s and A’s


Last night I made apple egg rolls. Three simple ingredients, egg roll wrappers, apple, cinnamon. I had raspberry greek yogurt with it and sprinkled the left over apple stuffing over my creation.Image

For breakfast this morning I made a tea latte and a bowl of granola topped with banana, blueberries and walnuts.Image

For lunch I made another egg roll creation (I am trying to use them up!) that I had with carrots, clementines, crackers, trail mix and greek yogurt. I put turkey, mozzarella and strawberry jam on the inside of my egg rolls and it was fantabulous. Image

My snack was a sunflower butter sandwich.Image

For dinner my mom and I helped each other to make a recipe from the sugar free and gluten free cookbook that Mary let me borrow. We made a few adaptions (spaghetti instead of linguini and chicken instead of shrimp) to the spicy tomato linguini recipe. It was so delicious! My mouth was on fire though! I love spice. Image


After breakfast this morning I got ready to go to church with Josh and Justin. I hadn’t been in probably a little over a year and before that it had been even longer. I feel uneducated when it comes to religion, and perhaps that is why I don’t go to church. I don’t like feeling “lost” when people are talking. It was Justin’s church that we went to and it was actually a pretty good service. I have awful memory so I have already forgotten much of the sermon, but I do know that I left feeling like I gained something from the experience. I think I would go back again. It could be a good way to help me find my identity.

When I got home from going to church with the guys I made my lunch and then got started on some extreme cooking! I made all of the main dishes for my client for the week. I literally worked in the kitchen the entire afternoon. Well, from 2:15 to 5:15. Check out what I made:

I sampled everything (sampling the food I made my client was one of my goals from my session with Mary) and it tasted so good! There were a few additions I would make to a few things if it were for me, but since my client has an array of foods that are on her no list I had to do without adding certain spices and veggies. It all was still very good! My mom seasoned the chicken for dinner using the same seasonings I used for the meatballs. She sampled the meatballs as well and instantly fell in love with them haha.

Once I finished my snack I logged the recipes I made for my client and calculated the nutrition before I set out for my run! I started running at sunset and it was absolutely gorgeous.Image It was the perfect temperature outside. The sunflower butter sandwich must have been the perfect fuel for me because I put in 5 miles and I felt like I could have kept going! Or maybe running in the dark just boosted my adrenaline. It was a little slow, but hey, there are a lot of hills in my neighborhood. ImageImageImage

Now I am just relaxing. I am trying to decide if I want to bake another recipe tonight or if I want to wait till tomorrow. Decisions, decisions…

Time Out

This weekend has gone by way too quickly. Anyone else agree?

Last night for dinner we had a variety of roasted veggies, sweet potato and pork tenderloin. It was fantastic! Image

We ended up playing catchphrase for a while, boys vs. girls. Us girls started off strong but then the boys came back to beat us, best out of five. My aunt really wanted to play again to have the chance to beat them, but we were all so tired from the early morning wake up call for the Krispy Kreme Challenge. I had a clementine and trail mix for my snack, which I enjoyed back in bed while I watched the Vampire Diaries. Image

I woke up early this morning, even though I went to bed at 1ish. Since everyone else was still asleep I decided to do my breathing exercises/meditation and then I wrote my Morning Pages before watching Netflix. I eventually rolled out of bed and made myself breakfast. I fixed an egg with veggies loaded on top and a bowl of oatmeal topped with berries. Plus a clementine and a mug of cherry tea.Image I relaxed as everyone else ate their breakfast and then I worked on the puzzles for the day. We said our goodbyes to my aunt and uncle. I am still so happy that they made the trip from PA just for one full day here!

After relaxing for a little longer Madelyne, Matt and I got ready to go to Chapel Hill. We decided to go to Time Out for lunch. It was featured on Man vs. Food so we thought it would be great to check it out. It was pretty good, but it wasn’t what we were expecting at all. I was expecting it to be a restaurant but it was an order at the counter place. It was still yummy! I had chopped chicken barbecue with green beans and a biscuit. Image

After we ate our lunch we decided to walk around UNC’s campus. It was absolutely GORGEOUS. The size is a little intimidating, but it seems to be relatively easy to navigate! It was just beautiful and I could definitely see myself there. ImageImageImageImageImage

Once we were done walking around we got back in the car and headed to Duke. Yes, I know, we visited the campuses of some of the biggest rivals ever. We walked around The Wall and then walked down Ninth Street to give Matt a little view of the Durham Life. We did so much walking! I drove around a little to show them a few different apartments to consider before heading home. It felt so good to relax after a day out!

For my snack I made a chai latte and then I had pretzels and apple slices dipped in almond butter. IMG_2367

For dinner we each kind of made our own thing using leftovers. I used leftover chicken to make a buffalo chicken sandwich with white american cheese. I also had a few sweet mini peppers. IMG_2368

Now we are all relaxing on the couch. I think it is going to be an early night for us. We are all pretty tired from the events of the weekend! I hope your weekend was filled with tremendous joy!

Novel Time

Good afternoon! I feel like I have so much to write about since my last post after yesterday’s breakfast. Brevity will be present so this post won’t feel like a novel!

Remember yesterday morning I mentioned how I was excited to go spend some time at the barn while the weather was still decent? That didn’t happen. I ended up taking my mom to Urgent Care because she really wasn’t feeling well. She had extreme dizziness so we decided it was better safe than sorry. She had been feeling dizzy for a few days but yesterday it was bad. I grabbed a spiced chai protein drink to have for my snack before I drove her to Roxboro. She was back there for a while, but her tests all came back relatively normal. We all, including her normal doctor, believe it to be a side effect of her dosage of prescribed medication. Booo, medication! I swear, medication can create more problems than you had to begin with! Not all the time, but that seems to be the case for my parents haha. My mom is doing much better today, so that is good.

When we got home from Urgent Care I fixed my lunch and ate it before I was off to my appointments! I fixed a pasta portion that I ate mixed with soup, a yogurt, trail mix and leftover buffalo turkey meatballs.ImageI will try and summarize my appointments as best as I can!

Appointment with Mary

My appointment with Mary was great, as usual 🙂 She is so optimistic and you just can’t help but be in a good mood when around her. We talked about my previous week and my hunger levels. After discussing the notes I wrote down reflecting on my emotions/hunger levels before and after eating as well as discussing a bunch of other random things, like my dad and how he has been doing, she helped me to come up with a list of goals for the week.

  • Letting go of control: Several times in my notes I wrote that I was comfortable with a meal because I cooked it. I need to work on being more comfortable if someone else makes dinner or if I don’t help. I feel like I have been practicing this – my mom has been cooking dinner for us some.
  • Let go of the uncertainty: I mentioned that I was more comfortable not knowing how to count food if it was in the evening. If I don’t know how to count my breakfast or lunch I tend to struggle the rest of the day. Mary told me that was a perfectionistic trait that I needed to let go of because it isn’t making my life easier.
  • Gradually relying less and less on my bubble sheet: this would be to practice fully listening to my body and it would further teach me that every day is not going to be the same.
  • Journaling and/or Morning Pages

Appointment with Lori

Another great appointment with Lori! We talked about my breathing exercises and about the places my mind wandered. She then told me about some other breathing exercises that I am to try. It was kind of an “information session” because a lot of it was spent on instructions for the breathing exercises. At the end we did spend a few minutes to discuss my thoughts on my future plans and she helped me to realistically prioritize them. Here are the breathing exercises if you care to give them a try as well:

  • Breathing exercise: focus on breathe. Notice thinking, label it as thinking and then refocus on breathe.
  • Thinking exercise: You can do the breathing exercise, but become curious about the type of thinking. “Advice giving” thoughts sway your thoughts or are past/future oriented. “Mushroom cloud” is when one thought leads to the next, which leads to the next and so on. It just keeps going and going. “Subtle thoughts” look neutral on the surface but a deeper exploration shows a different type of thought. “Neutral thoughts” are present moment thoughts often focused on the senses.
  • Feeling exercise: Focus is on just being. More feeling, less thinking. Pay attention to body sensations and the thoughts/emotions associated with those sensations.

I feel like I have lots to work on!

After my session with Lori I drove home. I ate my snack as I drove. I snapped a pic before my appointment with Lori because after the session it was dark out (and snowy). Image

When I got home I did some snuggling in bed with my mom until I got started on dinner. I made homemade ravioli using won ton wrappers! I followed the recipe that was on the inside of the label and it was delicious! It was easy to make but kind of time consuming because I was preparing it on my own. I ate mine with a few Triscuits. They were incredible and we all agreed that we would have them again. I had no idea egg roll and won ton wrappers were so versatile! Image

I relaxed the rest of the night before I fixed my snack and crashed. I had vanilla pudding with chocolate cereal and blueberries.Image


This morning I woke up early (couldn’t sleep) and watched a little tv before I did my puzzles and got up to make my breakfast and check out the snow! I made a tri color pepper scramble, a chai latte and a bowl of my homemade granola with blueberries and banana slices. Mmmm!ImageImage After breakfast I decided it was time to take action! I wasn’t about to delay things any longer with UNC. I had no real plans for the day so I suggested going to the Y so I could get my run in and then going to Carolina to the Office of Undergraduate Admissions to ask a few questions. At the gym I got my 3 miles in, and guess what, I did it in under 30 minutes!Image If you are a super runner you can go ahead and laugh, but that is great for me haha. I was happy. Sweaty and tired, but happy 🙂 I got a quick shower and then we were off to Chapel Hill! I ate my snack on the way which was caramel crisps and trail mix.Image I was in and out of the office in no time. My questions were answered/clarified and I have things that I need to go ahead and get on! On the way home we stopped to get a few groceries at Trader Joe’s and then we stopped at Barnes and Nobel. My mom wanted to look for a certain book that they didn’t have but she ended up buying two books for her and I because we have an addiction. When we got home we made our lunches. I had tomato soup, grilled cheese, mini cheese cracker sandwiches, carrots, an apple and greek yogurt.Image

I was going to ride with Renee this afternoon, but it was way too cold! Muy frio. I feel bad for all my people up north. I know it’s much colder there! I think now I am going to go search for our heating pad…

In other news, I literally JUST got invited to go on a ski trip sometime in the next few weeks. That would be fun, right? The guys are planning it during the week so hopefully my schedule (and wallet) will let me go!

Robot Syndrome, Santa Mile and a Surprise Ride!

What happens to you when you anticipate an event? I can tell you what happens to me. I turn into a robot to try and cope with those nervous feelings. Now that I reflect on this morning I feel like I was in a robot like trans. I was doing things I normally do, but I wasn’t mentally present so all of my actions were very methodic. I am sure it wasn’t that bad, but once the morning progressed I was getting more and more distant. More on this in a minute though.

Last night for my snack I had a peanut butter tortilla, peaches, pretzels and a glass of milk. Image

I woke up this morning and relaxed on the couch for a few minutes before I made my breakfast. I had black beans, cheese, peppers, onions and an egg on a tortilla, banana and pomegranate, chocolate almond milk and a mug of blueberry tea. It was all very tasty.Image My dad and I then did today’s crossword puzzle before I did laundry and went grocery shopping with my mom. I had pumpkin bread as my snack on the way to the store. At Harris Teeter I was emotionally distant and I went through the aisles grabbing what was on our list without doing much extra browsing. When we got home I unpacked the groceries and then went to the couch for some sudoku. Then I made myself a smaller than usual lunch. I had a pesto parmesan chicken burger on a sandwich with apples and carrots.Image I didn’t want to be over stuffed for my next activity.

At 1:45 I met some friends at the track for The Santa Mile. We have been doing this for a few years now so I am happy that I have been running some so that I could participate, even though it makes you feel so sick haha! This is what had me a little nervous this morning. I wasn’t sure what it would be like seeing that group since I haven’t seen them in a long time. I also was very nervous about The Santa Mile itself. The mile part didn’t bother me, but before you run each lap around the track you have to eat one cookie and drink a cup of milk. Bad combination with running, but it is always fun to just push yourself. I tried not to freak out about it and I told myself I could easily just work the milk and cookies into my bubbles. I took a quick glance at the nutrition of the cookies and they weren’t overwhelming like I was expecting. Also, there was one particular person I was a little anxious about seeing, but he ended up not being there so I was able to relax a little more and I wasn’t nearly as nervous, so I felt comfortable joking around with the other guys. So I guess that was a good thing haha. I came in last place, but I have always come in last place so I didn’t care. When I got home I decided to go to the barn because the weather is supposed to become really gross and I don’t know when I will have time to go out there this coming up week. When I got there Renee asked me if I was ready to ride today. I said of course, but I didn’t have stirrup leathers. An idea then came to me. I said I could borrow Barb’s stirrups and put them on the saddle Lena is letting me use. So that is what I ended up doing! I tacked up and lunged him, which ended up being more work than the ride because he just would NOT canter second direction. I got him to canter eventually and then called it quits on lunging. I rode with a fork and worked in a circle at the close end of the arena. The main lesson today was working on lifting Vinnie’s shoulders. I would push him to the inside and to the outside, both directions, at the walk. Then I did a little trotting. I would say that was a great first ride! Renee said I did really well and Vinnie looked good. I thanked her for her help and I am so excited to have some things to work on! Vinnie was worn out and I think he was happy to be back in his personal space haha.Image I was so excited that I got to ride today! It felt so good to be back up in that saddle! I came home and told my mom all about my afternoon and then I had a pudding and sun chips for my snack.Image
