I am trying to reconcile myself to a way of eating that is healthy. It is so hard to bring myself to eat larger portions at decent times. I still can’t completely accept the fact that I need to let go of always trying to cut corners when it comes to my food. My mind constantly goes through all the different options for a meal or snack and it makes me believe that I must choose what it lowest in calories. What is this madness?! The sooner I come to terms with myself, the better and healthier I will be. Goal set. So to practice this act of “resolving” I spent all day reconciling an account for an auto shop at my dad’s office. It felt good to get a lot of it done! There is only one year left. I will be back at it in the morning and will try and get as much done as possible before my dad and I leave at lunch to go home before the afternoon full of appointments.

I guess I could have done things a little bit differently today, adding a few more things to my meals/snacks. For breakfast I had overnight oatmeal and a banana. Snack was pepper jack cheese and pretzels. Lunch was spread out during the afternoon and consisted of an apple, almond butter sandwich (made on a bun) and passion fruit greek yogurt. I can’t decide if I liked the passion fruit yogurt. It was very different. Image

I guess it was a little weak-sauce. Eduardo was loud today. Tomorrow I WILL tell him to get the heck out!

Desk work made me really sleepy (or maybe I was just tired from waking up throughout the night) so when I got home all I wanted to do was hit the couch. I snuggled up with my cat and watched some Netflix before working on dinner. So want to hear about the super simple thing I made? Yeah? Ok… So I got this recipe from Pinterest… one day I will be creative enough to whip up my own concoction. Drum roll, please…

One pan pasta! Throw everything in the pan at once and let it cook. Easy peasy. The most difficult part is chopping everything. ImageI topped my pasta with some chicken and parmesan. I also put a bed of spinach at the bottom of my bowl so that when I served myself the pasta the spinach wilted and then I mixed it all together. ImageImageIt was so good! I am going to go watch some Monday night TV now. I need to find a good snack to have before going to bed tonight!

  2. Bethy, I ahve finally found time when I can read your posts..my lunchtime. I sit here at my desk and wish I were visiting with you..so I had spinach, ham and cheddar salad today..sorry about eduardo..but, I know you will kick him to the curb today…reconciling can take some time..but when you are finished…guess what..you are done..Yippee, your dad is very lucky to have you at the business. I love it as well, as it’s just so easy and tastes great to boot! I throw in a little almond butter or peanut butter in my morning oats to give myself a bit of a kick in the step.
